The wedding cake – do you want to go Italian ?

It is funny to hear all our brides and guests say: “wow, think food is just amazing, never tasted anything like this!”

It is true, Italian food is known world wide for it’s variety, pasta, colour and above all: the Taste !

Do not mix though, the Italian food abroad to the Italian in country food as really many times it has just nothing to do with it.

I had a bride last September that wanted: the “traditional Italian cake “, or better this was the name this cake had in New York, unfortunately…..in Italy there is no such cake.

And trust I had a hard time making her understand it was just a name this cake was given.

The most traditional is what we call: mille foglie or thousand layers.

It is like going to an Italian restaurant asking for : fettuccine Alfredo…… it’s famous in the world, but in Italy it may be tough finding them.

So: the most traditional cake sin Italy a for weddings are very different from the ones in the other countries, as the taste is always considered to be the first ingredient:

All cakes are done on the spot, if the caterer or patisseur are good. Fresh party, custard cream, fruits or chocolates. In any shape and size. And in many varieties in the pasty.

It is just great when you may get a patisseur to do all at sight: 10 minutes and your wedding cake is done, right in front of you and your guest !

…and the taste…… oh my god. Heaven still exists ,trust me !

Then, the patisseur is there, so the trip is paid for: let’s have him do your fresh personalized pasties during the open bar : all he ingredients on a table and your master patisseur assembles all creating your personalized dessert !

We also do: what we call American cakes: just amazing sponge cake base (with a wooden soul, the actual cake is usually 5-6 cm high, so be careful when doing your first cut !) with custard cream and fruits or chocolate and covered with almond pastry or white chocolate.

I just want to give you an advise: if choosing this sort of cake make sure you choose from a photograph they have of a cake they did, not from a magazine or the surprise might not be happy.

Unfortunately here, most patisseurs, caterers or who you wish are NOT able to do such cakes.

Trust me ! I just found One good one that make it ! and you do not even imagine how many trials I had done !
